Savory Crock Pot Beef Barley Soup

 And today I'm
posting my recipe for Savory Crock Pot Beef Barley Soup.
The ingredients on the breadboard are so colorful and healthy.
I serve this hearty soup with French bread covered with
Garlic and Parmesan cheese.
The barley is rinsed, and the parsley is
freshly picked from the herb garden. 
Fresh green onions and spices are ready to add to 
the crock pot.
This recipe yields 8 to10 servings.
Today I took my daughter and family
 some soup and bread so she could sit and watch football 
playoffs without having to get up and cook dinner. 
 I also froze a quart of soup for our dinner on another rainy Winter Eve. 

Savory Crock Pot Beef Barley Soup
Easy recipe to cook in a Crock Pot. 
Ingredients
  • 1 1/2 pounds boneless lean beef, cubed
  • 3 tablespoons vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons garlic powder
  • 3 (10.5 ounce) cans beef broth
  • 6 cups water
  • 4 stalks chopped celery
  • 6 chopped carrots
  • 6 chopped green onions
  • 1/2 cup chopped fresh parsley
  • 1 cup barley
  • 1 teaspoon dried thyme
Instructions
In the skillet over medium heat, saute the beef in the oil for 5 minutes, or until browned. Stir in the salt, pepper and garlic powder and place seasoned meat in the crock pot. Add the broth, water, celery, carrots, green onions, parsley, and barley. Cover and cook on low setting for 6 to 8 hours, or until the vegetables and barley are tender. Add the thyme just before serving.
